A ranger-led night-time walk on the Anhinga Trail was especially fun. The alligators make quite a bit of noise. The Tamiami Trail (Route 41) is good for a lot of birds (Wood Storks & kites) too. And, we even had some interesting birds right in Homestead like the Eurasian Collared Dove, the recently established Common Myna, and a Loggerhead Shrike (while poolside). But, my favorite birds were the Burrowing Owl, which is reliable at Sunbrero Country Club (in Marathon in the Keys) and the Frigatebird (seven mile bridge). Good luck.
